Can reheat rice cause food poisoning?

Foodborne illness, sometimes known as food poisoning, is caused by consuming infected, rotten, or poisoned food. Nausea, vomiting, and Diarrhea are the most frequent symptoms of food poisoning. Food poisoning is most commonly caused by bacteria, viruses, and parasites or their poisons. At any moment during the processing or production process, infectious organisms or their poisons can contaminate food. Food can become contaminated at home if it is mishandled or prepared improperly. So, how can reheating rice cause food poisoning?

What causes food poisoning when rice is reheated?


Uncooked rice contains Bacillus cereus spores, which can cause food poisoning. The spores can survive when the rice is cooked.
If rice spores are stored at room temperature, they can turn into bacteria. These bacteria proliferate and produce toxins (poisons) that cause vomiting and diarrhea.
The longer cooked rice remains at room temperature, the more germs or poisons may accumulate, making it unsafe to consume.
 
The infection caused by Bacillus cereus, sometimes known as “fried rice syndrome,” can cause nausea, vomiting, and diarrhea, among other unpleasant symptoms. Symptoms normally develop a few hours after eating leftovers, although they only last around 24 hours.
 
One or more of the following symptoms are present in the majority of cases of food poisoning:
  • Sickness
  • Vomiting
  • Diarrhea that is either bloody or watery.
  • Cramps and stomach ache
  • Sickness

How can rice be prevented from getting bacterial attack?


  • Serve rice as soon as it is still hot after it has been cooked.
  • If you want the rice to stay hot until it’s time to serve it, keep it above 63°C. If the rice will be refrigerated later, cool it as quickly as possible with cold water, spreading thinly on a tray or another method, to below 20°C in under one and a half hours.
  • Refrigerate rice for no more than one day before reheating, ensuring that it is properly labelled and covered.
  • Make sure the refrigerator is working properly (temperature should not exceed 5°C).
  • Before reheating rice, make sure it’s steaming hot all the way through.
  • Rice should not be warmed more than once, and vessels should be washed before being reused.
